I am not a sardine fan (bad childhood memories) but I saw a video on YouTube about artisanal sardines on the Regional Eats channel (Why This Delicate, flaky fish with great flavor. I did notice that the spice level varied between tins, with some very spicy and others not so much. The sardines refer to canned sardines in tomato sauce, while luffa is a type of vegetable; it is known as Patola in Filipino. I am featuring this recipe because I grew-up enjoying this dish.
