Sardine is cooked in Banana Leaf and then cooked in Kanal-Charcoal. Pictured - Rice, chena ularthu, mathi pollichathu. The base of the curry is a blend of onion tomato mustard mixture, which lends a unique flavour. The use of earthern pot makes the sardine curry all the more tasty.

Steps to make Mathi Pollichathu (Sardines cooked in Banana leaf):
  1. Wash and clean the banana leaf and thaw it directly on the heat. Heating the leaf makes it flexible to fold. Place and layer the leaf inside the earthen cooking vessel.
  2. Clean the fish and apply turmeric, coriander, chilli, salt and gently massage it for the flavours to get it. Add the shallot, green chilli and curry leaves. Check for seasoning and adjust accordingly.
  3. Place the marinated fish on top of the banana leaf and pour the diluted coconut milk. Place the vessel on low heat and allow it to cook for 10 to 15 minutes until the coconut milk evaporates. Then pour the thick milk over it, cook for a minutes and switch off the flame.
  4. Delicious Fish in typical kerala style is ready to be served with steamed rice.

When the leaf gets brown in colour, remove it from the pan. Then open the leaf pack and enjoy the Mathi Pollichathu!!! Mathi or sardines are cooked in tomatoes and coconut milk, with coconut oil.
