- Once done allow it to cool for few minutes. Very carefully remove the pie weight and keep it aside.
- For the blueberry sauce combine sugar, blueberries and 1/4 cup of water and 1 lemon juice. Cook till it forms a thick sauce
- Take it off the stove and cool keep it aside.
- Pour this mixture in the prepared tart shells till half, decorate it with lemon zest, mint leaves and lemon wedge
