  1. Prepare 1 cup Colocasia/Taro leaves with steams (Aluchi pane), peeled & chopped

  3. Make ready 1/2 cup Amaranth leaves (Math), chopped
  4. Take 1/4 cup Yam (suran), peeled & chopped
  5. Get 1/4 cup Ladyfingers/Okara (Bhendi), chopped

  7. Make ready 1/4 cup Cluster beans (Gavar), chopped
  8. Make ready 1/4 cup Snake gourd (Padwal), chopped
  9. Take 1/4 cup Ridge gourd (Shirali), peeled & chopped
  10. Get 1/4 cup Sponge gourd (Ghosali), chopped
  11. Get 3-5 Green chillies, chopped
  12. Get 2 tsp Tamarind pulp
  13. Prepare 1/4-1/2 cup Fresh scraped coconut
  14. Get to taste Sea salt

The recipe uses vegetables grown without any ox labour and mix of vegetable types - fruit, root and leafy type. Rushichi Bhaji is a classic Maharashtrian dish usually prepared on Rishi Panchami, i.e. the day after Ganesh Chaturthi. It is prepared with seasonal vegetables and tubers like colocasia leaves, red amaranth leaves, raw banana, sweet potato, red pumpkin, sweet corn, green peas etc. Second day after Ganesh chaturthi is celebrated as Rushi panchami.

Steps to make Rushichi Bhaji ~ Rishi Panchami Sabji:
  1. Wash and chop all veggies as desired size. Chop yum into small pieces, it takes more time to cook.
  2. Combine all veggies in a big heavy bottomed vessel.
  3. Add chopped green chilies and salt. Mix well.
  4. Cover with S.S plate. Pour some water on a plate. Do not add water, the veggies release water and enough to cook these veggies.
  5. Cook on low heat till all veggies cooked well. Stir occasionally with soft hand. Check in between by pressing hard veggies with fingers.
  6. Add tamarind pulp and scraped coconut. Mix well and cook for 1-2 minutes.
  7. Serve warm with bhakari/rice roti.
