Instructions to make Baked trout and vegetables:
  1. Heat oven to 180 degrees c
  2. Chop vegetables and place on ovenproof tray. Season with olive oil and salt and pepper (I added s little chilli too)
  3. Clean fish and fill cavity with mixed herbs. Rub with olive oil or butter and seasoning. Wrap in foil.
  4. Place fish on a tray and bake both fish and vegetables in the oven for approx. 30mins. ( depends on size of the fish. Rest for 5 minutes and serve. Note: this dish contains fish bones.

The trout can be served as they are with your favourite seasonal vegetables, but for an added extra touch, peel. Baking trout isn't difficult and is an excellent way to retain the flavor and healthy qualities of the fish. When done, trout is moist and flaky with an opaque appearance.
