The ingredients needed to make Roasted Duck:
- Take 1 Duck (about 6lbs)
- Prepare 1 Onion
- Make ready 1 Orange
- Prepare 1 dash Freshly Ground Peppercorn
- Get 1 dash Salt
- Make ready 1 dash Parsley or Fresh Parsley Clove

Instructions to make Roasted Duck:
- Preparation: - -Make sure duck is fully thawed. - -Clean out Giblets. - -Trim loose skin around neck of duck. - -Trim excess fat around main cavity. - -Rinse whole duck under cold water. - -Pierce JUST the skin of the duck, do not pierce the meat. (This helps with the skin getting crispy) - - Preheat Oven or Grill to 350°F.
- Quarter the onion and orange, then stuff the duck.
- Season duck with freshly ground peppercorn, and salt.
- Put the duck directly on your grill, or on a baking sheet if you're using the oven. - - Cooking time should be approx. 2 1/2 - 3 hours. (Make sure the meat temp reads 160 degrees).
- After 2 1/2 hours, sprinkle parsley on top of duck, and increase heat to 375 (this will help crisp the skin and also add color to the duck.)
- After 30 minutes at 375, remove the duck and cover with a foil tent, and let stand for about 15 minutes. - - Serve and enjoy!!
Roast duck is a bit of an effort to make but well worth it. This recipe will make a versatile stock as well as a roasted duck. Line bottom of oven with foil to catch any spatters. Rinse duck in cold water; pat dry with paper towels. Remove the duck from the package and pat dry with paper towels.
